Recipe Baking: SWISS STEAK
2 lbs. round steak, 1" thick
Flour
Salt
Pepper
2 tbsp. shortening
1 onion, diced
1 c. diced celery
1 green pepper, diced
1 c. tomato soup
1/4 c. water
Cut meat into serving pieces. Season with salt and pepper and roll in
flour. Heat pressure cooker; add shortening. Sear meat golden brown on
both sides. Add onion, celery, pepper, tomato soup and water. Close
cover securely. Place pressure regulator on vent pipe and cook 15
minutes with pressure regulator rocking slowly. Let pressure down on its
own accord. Thicken gravy, if desired.

SALISBURY
STEAK, ONION GRAVY

(10 1/2 oz.) Campbell's condensed
onion soup
1 1/2 lb. ground beef
1/2 c. fine dry bread crumbs
1 egg, slightly beaten
1/4 tsp. salt
Dash pepper
1 tbsp. flour
1/4 c. catsup
1/4 c. water
1 tsp. Worcestershire sauce
1/2 tsp. prepared mustard
In bowl, combine 1/3 cup soup with beef, crumbs, egg, salt and pepper.
Shape into 6 oval patties. In skillet, brown patties; pour off fat.
Gradually blend remaining ingredients; stir to loosen browned bits.
Cover; cook over low heat 20 minutes or until done. Stir occasionally.
