  Recipe Baking: Steak - low fat - special diet  Directory    

   Recipe Baking: MARINATED SALMON STEAKS OR SWORDFISH STEAK


   2 salmon steaks or swordfish steaks, 1
inch or 1 1/2 inch thick
1/8 c. olive oil
1/8 c. orange juice
1/8 c. dry white wine
1 tbsp. fresh diced parsley
1 garlic clove, minced
1/8 tsp. salt
1/8 tsp. black pepper (coarsely
ground)

Mix all ingredients. Marinate overnight in refrigerator. When grilling or broiling, drain fish steaks but save remaining marinade. Grill on medium 6 to 8 minutes per side depending on thickness. Baste as needed. Test with fork to be sure fish flakes.

 CHINESE STEAK

 2 tbsp. peanut oil
3 c. finely shredded cabbage
1 c. chicken broth, canned or homemade
2 tsp. cornstarch
1/4 tsp. garlic powder
4 tbsp. soy sauce
1 1/2 lb. steak (sirloin), 1/4 inch
thick, cut in 2 inch strips

Heat 1 tablespoon oil in saucepan, stir in cabbage and cook over low heat 10 minutes, stirring frequently. Add 1/4 cup of broth; cover and cook over low heat for 5 minutes, then drain. Mix the cornstarch, garlic powder and soy sauce in a saucepan until smooth. Add the remaining broth and cook over low heat, stirring constantly until the boiling point is reached. Cook 5 minutes longer. Heat the remaining oil in a skillet; brown the meat in it over high heat. Add the sauce. Arrange the cabbage on a heated platter and pour the steak and sauce over it. Serves 6 - 325 calories per serving.
