  Recipe Baking: Steak - casseroles recipe    

   Recipe Baking: ROUND STEAK & VEGETABLE CASSEROLE

  2-3 lb. round steak, cut into pieces
2 tbsp. salad oil
2 lg. onions, sliced
2 c. sliced carrots
2 c. fresh mushrooms
1 med. green pepper
1/2 lb. fresh green beans, cut into
pieces
3 med. tomatoes, sliced
1/2 c. uncooked reg. rice
2 tsp. salt
1 1/2 tsp. sweet basil
1/4 tsp. pepper
1 c. shredded cheese

Brown meat in oil. Arrange 1/3 of vegetables in a 4 quart casserole. Place half of the meat over vegetables and sprinkle with 1/3 rice and seasonings. Add another 1/3 of vegetables, the remaining meat, 1/3 seasonings and all of remaining rice. Top with remaining vegetables and seasonings. Cover and bake 1 1/2 hours at 350 degrees or until meat is tender. Remove cover. Sprinkle cheese over top and return casserole to oven to melt cheese. Makes about 6 to 8 servings.

                                 STEAK & WILD RICE CASSEROLE

 1 1/2 lbs. family steak
1 c. chopped onion
3 c. chopped celery
1 can mushrooms
1 can mushroom soup
4 tsp. soy sauce
1 pkg. Uncle Ben's grain & wild rice
3 1/2 c. boiling water

Cut meat into small chunks. Brown. Add onions, celery soup and mushrooms. Combine with remaining ingredients in large casserole, simmer 10 minutes first, then bake covered at 350 degrees about 45 minutes. This works real well prepared in an electric fry pan.
