 It provides also high quality protein and many other nutrients, including Vitamin A unless the butterfat has been removed. In general, however, its greatest contribution is its high percentage of calcium, so vital to people whose bones need full strength to resist the effects of arthritis.

2. Meat Group

Use two or more servings daily.

Foods in this group are valued for their protein which is needed for growth and repair of body tissues-muscles,

organs, blood, skin and hair.

They provide iron and the important vitamins-thiamine, riboflavin and niacin also.

In addition to meat this group includes poultry-chicken, turkey, goose, duck and other fowl, fish and shellfish and eggs. Use four or more eggs each week. As alternates you may use dry beans of all kinds, peanuts, peanut butter and other nuts.

3. Vegetable- Fruit Group

Use at least four servings of vegetables and fruits daily.

Although all vegetables and fruits are in the group, the emphasis is on those valuable as sources of Vitamin C and
Vitamin A. Include one serving of a good source of Vitamin C or two servings of a fair source.

The sources of Vitamin Care:

Good: Grapefruit or grapefruit juice, oranges or orange juice, cantaloupes, raw strawberries, broccoli, cabbage.

Fair: Tomatoes or tomato juice, tangerines or tangerine juice, raw cabbage, greens, potatoes and sweet potatoes cooked in jackets.

Use one serving of a good course of Vitamin A at least every other day.

The sources of Vitamin A are:

Dark green and deep yellow vegetables including broccoli, green peppers and all kinds of greens such as chard, I collards, kale, spinach, carrots, pumpkins, sweet potatoes and yellow winter squash. Also included are fruits such as apricots, cantaloupes, mangoes, persimmons and peaches.

4. Bread-Cereal Group

Use four or more servings daily.

Foods in this group offer significant amounts of protein, iron, several of the B

vitamins and food energy.

Included are all breads and cereals that are whole-grain, enriched or restored. Check labels to be sure. Cornmeal, crackers, flour, grits, macaroni products, rice, rolled oats and other baked goods made with whole-grain or enriched flour also are in this group.
