Recipe Baking: no bake cookie recipe Directory Recipe Baking: NO BAKE COOKIE BALLS 3 tbsp. white corn syrup 3 c. powdered sugar 1 c. walnuts, chopped fine 2 tsp. instant coffee diluted in 1/4 cup hot water 1 3/4 c. vanilla wafers, crushed fine (about 3 dozen) In double boiler melt chocolate chips; remove from heat and add corn syrup, 3 cups powdered sugar, nuts, diluted coffee and vanilla wafers. Cool. Do not have dough too stiff. Add 1 or 2 teaspoons of water if necessary. Form dough into 1-inch balls and roll in more powdered sugar. Store in a covered container on the top shelf of a cupboard out of reach for 5 days. These usually don't last but a few hours once they are ready to eat. Variations: Use 2 teaspoons of vanilla instead of coffee or 1 tablespoon creme de mint or Kalhua.
